White Vienna Kohlrabi microgreens are tender, crisp, and pale green, with a mild, slightly sweet brassica flavour — similar to broccoli or mild cabbage. Though less colourful than the purple variety, they are fast-growing and nutrient-rich, making them a fantastic addition to salads, sandwiches, smoothies, and garnishes. Their subtle flavour makes them a versatile choice for both home cooks and chefs.
Best Growing Time
Suitable for year-round growing in most of South Africa.
Best results in spring to autumn (Aug–Apr).
Protect from frost and extreme heat.

Optimal range: 18–24°C
Growth slows below 12°C and above 28°C
What You’ll Need
Shallow tray (3–5 cm deep) with drainage holes
Seedling mix, coco coir, or well-aerated potting soil
Spray bottle or bottom-watering tray

Sowing Instructions
Fill your tray with moist growing medium to a depth of 3–4 cm.
Sprinkle seeds densely and evenly across the surface.
Gently press seeds into the soil for good contact (do not bury).
Mist lightly with water to moisten the seeds.
Cover the tray with a lid or another tray to create a blackout period for 2–3 days.
After Germination
Once most seeds have sprouted (usually after 2–3 days), remove the cover and place the tray in a bright area with indirect sunlight or under grow lights.
Ensure they receive 12–16 hours of light daily for healthy growth.
Watering
Mist gently once or twice a day to keep the soil surface moist.
For better root development, bottom watering is ideal: place the tray in a shallow water tray for a few minutes and remove once the top feels moist.
Harvesting
Ready to harvest in 7–12 days, when microgreens are 5–8 cm tall and have developed their first set of true leaves.
Use clean scissors to cut just above the soil line.
Rinse gently and use fresh. Store in a container in the fridge for up to 5 days.
